6Smith Converting Rooftop Patio Into Private Dining Space
Wayzata restaurant 6Smith is transforming its rooftop patio – previously open to the public – into a private dining venue as part of a strategy to stretch the busy season, differentiate it from other restaurants on Lake Minnetonka, and navigate staffing shortages.
Typically, Minnesota's lakeside restaurants experience the "Memorial Day to Labor Day phenomenon," where they're "way over capacity in the summer and way under capacity in the winter," 6Smith owner Randy Stanley said. Because of that, savvy restauranteurs look for ways to bring in more customers during the off-season, in early spring, late fall and throughout the winter.
At 6Smith, Stanley and his team have long pondered the best possible use for the rooftop patio, and ultimately decided to close it to the general population of customers and make it bookable for private events, like corporate meals, birthday parties, weddings and other celebrations or gatherings.
